Gawthi Mutton Curry

In the village, no wedding, feast, or gathering truly began until the mutton curry was set to simmer. Its age old recipe had travelled through generations, measured not in spoons, but in memory: hand ground spices, slow-cooked onions, tender meat, and the patient warmth of a wood fire. Every family had a hand in it, whether stirring the great pot, bringing fresh herbs, or laying out plates beneath the open sky.

The first fragrance of the curry drifting through the lanes was enough to call everyone together. One taste carried people back through the years, to laughter at crowded weddings, children running between the elders, music in the distance, and neighbours eating side by side as though they were one family. It was more than a dish; it was the flavour of the village itself, rich with culture, love, and togetherness.

Step by step

Method

  1. Heat a pot, put in the ghee and oil and let it heat up

  2. Once the ghee and oil mixture is hot, add the whole spices in it and fry them for about 30 sec to 1 minute

  3. Add the onions and fry them until they are golden brown

  4. In goes the mutton (which is cleaned, washed and drained)

  5. Cook the mutton with the onions for about 2 minutes until it changes color

  6. Add salt and mix thoroughly and let it cook for 2 minutes

  7. Once the mutton starts to release water, add Ginger & Garlic paste and the chili paste

  8. Stir to mix the ingredients and saute them until the raw smell of ginger and garlic goes away

  9. Add tomatoes and chopped coriander in and mix them thoroughly

  10. Cook until the tomatoes are mushy and very soft. The mutton will release water and cook in its own juices

  11. Add the powder masala (excluding the coconut milk) and mix

  12. Let the mutton cook in its own juices for about 15 to 20 mins until it releases oil

  13. Mix the roasted coconut milk powder with water and make it as a slurry (not too watery)

  14. Add the coconut and water mix to the pot and mix it thoroughly

  15. Let it cook for about 10 more minutes until all the masalas are properly cooked and mixed

  16. Add hot water (quantity adjusted as needed) to the pot to make it a curry. Taste the salt and adjust if needed.

  17. After the first boil, let the curry cook on low heat until the mutton is cooked. Keep checking and stirring from time to time.

  18. Serve when the mutton is cooked as desired
